Sheepster : Although we weren't big meat eaters, husband and I became vegetarian last summer. I use this book over and over and you don't need to be a vegetarian to get a lot of use out of it. Bittman is a very hands-on, no-nonsense kind of writer/cook. I've saved a lot of money by using a lot of his recommendations, such as cooking beans over buying canned beans (so easy and so much cheaper) and making my own salad dressing (much tastier!). If you are a vegetarian (or vegan--he offers alternatives) this is a must have book.
